Try These Quick and Easy Recipes for Vegetable Soups – Garden , Ramen, and Noodle
One good way to eat more vegetable, as the nutritionists are always telling us to do, is to eat more soups. Soups are quick, easy, healthy and these recipes are chock full of those required vegetables. Good for the adults and youngsters alike, try these for your family soon. The good thing about these recipes is that you can use them as a guide and adjust spices and vegetables to suit your family’s tastes.
QUICK AND EASY VEGETABLE NOODLE SOUP
2 1/2 quarts water
2 envelopes dry onion soup mix
2 cups sliced celery
1 cup sliced carrots
2 medium tomatoes, diced
1 large potato, scrubbed and diced
1/4 cup chopped parsley
4 oz medium egg noodles
In a large saucepan or a Dutch oven bring the water to a boil; stir in the dry onion soup mix, stirring well until blended. Add the celery, carrots, tomato, potato, and parsley. Reduce heat to low and simmer, stirring occasionally, 15 minutes or until the vegetables are crisp tender. Return the soup to a boil and add the noodles. Cook, stirring occasionally, for another 7 or 8 minutes until the noodles are fork tender.
GARDEN SOUP
1 small yellow onion
1 cup chopped celery
1 small green bell pepper, chopped
1 medium carrot, shredded
1/4 cup butter
7 medium tomatoes, peeled and chopped
4 1/2 cups chicken or vegetable broth, divided
2 tsp sugar
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/2 tsp curry powder
1/4 cup all-purpose flour
In a large saucepan, melt butter; saute onion,celery, bell pepper, and carrot until tender. Add 4 cups of the broth, tomatoes, sugar, salt, pepper, and curry powder; bring mixture to a boil. Reduce the heat to simmer and cook uncovered for 20 minutes.
In a small bowl mix the flour into the remaining half cup of broth and stir until smooth. Gradually stir the flour mixture into the soup and bring to a boil. Cook and stir until thickened and bubbly, about 2 minutes.
Yield: 6 servings
QUICK VEGETABLE RAMEN SOUP
1 pkg ramen noodle soup, your flavor choice
1/2 cup chopped fresh broccoli
1/2 cup tiny cauliflower florets
1 green onion, sliced
Follow the package directions for cooking the ramen. When water boils, add the broccoli and the noodles. Cook until the noodles are tender. Stir in the green onion and the ramen seasoning packet. Serve at once while hot.
Yield: 2 servings
